You are absolutely right, one would be amazed to see the grandeur of Rajasthan palaces, Mahals and hotels. I love the delicious food of Rajasthan as well. One should take a Rajasthan tour at least once if not more.

For longer distances it s better to go by Air and for shorter distances hiring a taxi or car are the best options. Indian trains are quite slow so its better to avoid them for long rout travel.

I have never been to Kashmir ever but I really want to visit at least once.

I think Delhi is the best when it comes to shopping, places like Chandni chowk, Karol Bagh, Dilli haat, South ex.,Connaught Place, Sarojini Nagar and Khan Market.
